This refreshing overnight oats recipe will save you time in the morning, but still keep you full until lunch!
This is now my fourth overnight oats recipe on the blog–you could say I’m a little obsessed with this breakfast. It’s because it’s SO simple to put together and it makes your life easier when you’re rushing to work in the morning (or whatever you have going on).

Not going to lie, this may be my favorite version yet. I don’t know what it is about lemon, blueberry, and coconut, but when they’re combined, it’s one of my favorite flavors ever. The lemon and blueberry are a little tart, but the blueberry also adds some sweetness, then the coconut adds a nutty taste and crunchier texture.
Besides those three ingredients, you have the oats, chia seeds, milk of choice (I prefer almond), vanilla, and maple syrup to add a touch more sweetness and flavor.
With the oats, you could use quick (aka instant) or old fashioned (aka rolled). I typically use old fashioned because they are less processed and bigger pieces of oats, but the only difference between the two in this recipe is that quick oats soak up liquid more, so you may just need to add a bit more milk before eating.
Then with the chia seeds, I actually grind mine up in a coffee grinder (thanks for the idea, Travis from Karma Coffee Co). This makes it so you don’t have big seeds getting stuck in your teeth, plus, when whole, they get all gelly when absorbing liquid and I’m not a fan of the texture. You can buy ground chia seeds some places, but I highly suggest investing in a coffee grinder, because then you can have fresh ground coffee too 🙂 (There are really cheap ones out there. I have an older version of this one).
This sounds like an exaggeration, but overnight oats have seriously been a life changer for me. Although I wake up early most mornings, I still don’t end up making enough time to fix breakfast. Plus, I don’t ever eat until I get to work, so most times I have to re-heat a hot breakfast anyways, which is usually okay, but sometimes I’m not in the mood for microwaved eggs. If I take five minutes at night and put some overnight oats together, I can grab them as I head out the door.
They have come in handy for different situations at work, too. We had a retreat one morning and there was no way I could bring a hot breakfast and re-heat it there, so I made some overnight oats and actually stuck the jar right in my purse. I got some looks and questions from the people sitting near me as I started to eat them, but they were actually really interested in the whole overnight oats concept, which allowed me to spread the word about this awesome breakfast.
So whether you need an easy breakfast to grab on the way out the door in the morning or maybe you just love the taste of overnight oats, I highly suggest you try this refreshing lemon blueberry coconut version!
