HAPPY OCTOBER! I cannot believe how fast summer went and that fall is here already! Hey, not complaining one bit. I wish it was fall allll year. I feel a bit weird, though, because this year I didn’t go back to college, so I’m experiencing fall at home for the first time since high school (and the first time ever as an adult).
No matter where I am, I love all parts of fall—wearing hoodies and jeans, cuddling, leaves changing, hayrides, bonfires, apples, squash, and of course PUMPKIN SPICE. I’m not ashamed to say I jump on the pumpkin spice bandwagon each fall (although I’m not much of a PSL fan). Rather than buy pumpkin spice everything at the grocery store (I mean everything. Have you seen some of the pumpkin spice things they’re coming out with?), I like to experiment and make my own recipes, including these maple pumpkin spice almonds!
There are some delicious seasoned almonds at the store, but as you may have guessed, they’re full of yucky ingredients (sugar, maltodextrin, and vegetable oil being some of them). Instead, make your own seasoned almonds at home!
Ever go to a fair or festival and have candied almonds? This recipe reminds me of those so much! The maple syrup gives them a sweet flavor with a kick of cinnamon, ginger, nutmeg, clove, and allspice from the pumpkin spice at the end. I usually make my own pumpkin spice, but they sell it pre-made at the store too.
These are so good, but be sure not to eat TOO many. Almonds are a great source of protein, vitamins, fiber, and more, but they’re also high in calories, so try to stick with the average serving of ¼ cup (about 25 almonds).

Maple Pumpkin Spice Almonds

Enjoy these maple pumpkin spice almonds as the perfect fall-time snack!
You'll Need...
- 1 cup raw almonds
- ½ tablespoon melted coconut oil
- 1 tablespoon pure maple syrup
- 1 teaspoon pumpkin spice*
- Dash of salt
Directions
- Preheat oven to 300ׄ°F.
- Add raw almonds to a baking sheet with parchment paper and roast in oven for 10 minutes.
- While almonds roast, add coconut oil and maple syrup to a bowl.
- When almonds are done, add to the bowl and coat well.
- Add almonds back to the baking sheet and roast another 10 minutes, mixing halfway through.
- When finished, add almonds to a bowl and sprinkle half of the spice on (1/2 teaspoon) and mix well.
- Allow almonds to cool and add remaining spice and a dash of salt.**
Additional Notes
*Make your own pumpkin spice. I use this recipe.
**You can eat them warm, but if you let them cool, the added seasoning will be a light dust on the outside of the almonds, rather than getting wet and sticky from the hot maple syrup and coconut oil.
