Woah, it’s March already? Time can slow down now. Except I am SUPER excited that it’ll be warmer and we’ll have more daylight soon, which means instead of doing the boring elliptical in the morning, I can take the dog for walks! Going for walks is my favorite way to move, especially because we live in such a beautiful, rural area.
So, breakfast. I am obsessed with breakfast. Not just breakfast foods, though, but the feeling of waking up and starting a brand new day with a yummy meal (and sometimes a hot cup of coffee). With my busy schedule and the weather getting nicer, I struggle to find enough time to make breakfast in the mornings, and I know I’m not alone. I’ve turned to easy recipes I can make ahead, and I’m excited to share a version of my favorite with you today–overnight oats.
If you haven’t tried overnight oats yet, you need to get on that. They are life changing! I actually just suggested to the manager at our local coffee shop that he should start making them to sell. You mix oats, milk, chia seeds, and a few other ingredients together in a container (I use these jars), sit it in the fridge, then in the morning you have breakfast ready to go! The oats are cold, not hot like oatmeal you may be used to, but don’t let that throw you off. I was unsure about them at first, but they’re actually SO GOOD.
My friend Rachel is the cutest and started making overnight oats all the time after she saw my pecan pumpkin pie overnight oats recipe. It was actually her idea to add crunchy peanut butter to them for some nice texture. Genius! I like the Krema brand–it’s 100% peanuts.
You can get as creative as you’d like with these. This recipe is a simple peanut butter banana flavor with cinnamon and vanilla, but I’ve made all different kinds too. Some other ingredients I like to include: coconut flakes, crushed nuts, goji berries, and almond butter. (I actually get all these items for cheap on Thrive Market. **I prefer ground chia in mine, because whole chia seeds get a gel around them and get stuck in my teeth. I grind the seeds in a coffee grinder, but you could also use a spice mill, food processor, blender, or mortar and pestle. The seeds get fluffy once ground and take up more space, so make sure you pack it into the measuring spoon to get the full tablespoon.

LOVE overnight oats! I used to make them all the time and I would add a little bit of protein powder too just to get a little more protein. I’m a peanut butter junkie (srsly, I’ve tried tons of flavored peanut butters haha), so I’m sure I would love this one. I will have to try this out 🙂

Protein powder is such a good idea! I actually have some collagen peptides that I forget to add to things each day because I don’t always drink coffee–I should add it to these!

I love overnight oats as well! I like to use a little less milk and add greek yogurt, chia, fresh berries, and a touch of honey! Great tip on grinding the Chia seeds, will have to try that and also the peanut butter one!

Adding greek yogurt sounds like it’d be creamy and tangy–YUM! I like to use coconut cream (the thick stuff at the top of a coconut milk can), too. I hope you like the ground chia seeds!
