Use up those over-ripened bananas on your counter and make these banana pancakes with just a few ingredients!
While I certainly LOVE banana bread (find my chocolate chip banana bread recipe here), I’ve found many different ways to use up brown bananas—one of those being banana pancakes! This is probably one of the easiest ways to make pancakes, all you really need is bananas and eggs, along with just a couple other ingredients and toppings!
This recipe was actually going to be one of the first I posted when I created my blog, but to tell you the truth, I could not cook them right. Every time I made these pancakes they were super delicious, but would fall apart when I flipped them. I tried making them differently–more banana, more eggs and different amounts of heat–but I just kept failing. They tasted good, but I didn’t want to share the recipe until they actually looked like pancakes.
After getting a Vitamix for Christmas, I thought maybe blending the batter together a little would help and sure enough I FINALLY found the answer. All along I had been mixing the eggs and banana together with a fork, which left it pretty chunky, but I really needed to blend them to make them smooth!
Some other tips for making these pancakes include: Keep your pan at medium low the whole time. If the heat is too high, the outside will cook before the inside and it will be gooey and hard to flip. Also, you want to keep the pancakes a small size, because the bigger they are the thinner they will be, making them again, impossible to flip. Finally, I’ve found that adding a little almond or peanut butter to the batter makes them extra tasty, but also helps the pancakes stick together! This is optional though.
I’m super excited to have finally perfected this banana pancake recipe and to share yet another easy and healthy meal! This recipe makes about 3-4 small pancakes, so you may want to double or triple it if you’re sharing. I usually top mine with almond butter, fruit and nuts. They aren’t thick and fluffy like pancakes you may be used to, but I’ve really grown to love these banana pancakes and I hope you do too!

You'll Need...
- 1 over-ripened banana
- 2 eggs
- 1 teaspoon vanilla extract
- A dash of cinnamon
- 1 teaspoon peanut or almond butter (optional)
- Toppings of choice
Directions
- Add all ingredients (other than the toppings) to a blender and blend until the batter is smooth.
- Spray griddle or pan with nonstick spray and heat on medium low.
- Once pan is hot, pour batter into small pancake shapes. Because the batter is thin, it will spread out some.
- Keep an eye on the pancakes and flip once the edges start to turn dry and the bottom browns.
- Once the second side is brown, the pancake is cooked. Add toppings and enjoy!
