Anyone else struggle when someone asks what your favorite season is? I just can’t ever decide. I’m not a huge fan of heat, but I enjoy the food and relaxation that comes with summer; spring gives such feelings of new life, with green grass and beautiful flowers popping up; I can’t get enough of the leaves and bonfires that fall brings; and then there’s winter. I can’t believe I’m saying this, but winter is up there as one of my favorite seasons. The beautiful snow, cuddling by a fireplace, building snow men, comfy warm clothes, CHRISTMAS, and of course, soup.
There’s just nothing quite like a big bowl of hot soup to warm you up on those cold winter days. I have such fond memories of “Soup Sundays” my family would have when I still lived at home. Every Sunday during the winter my mom would make a different soup (she makes the BEST) and we’d all hang out in the living room by the fireplace, just lounging around all day.
While I certainly don’t make soup as delicious as my mom does, this cabbage roll soup comes pretty dang close. I always seem to get a giant head of cabbage at the store and only use half of it for a meal, which led to the creation of this soup! It’s just like a cabbage roll, but deconstructed and turned into a soup, which is way easier to make. Don’t be afraid to add extra veggies to the soup for more nutrients. Carrots are included in the recipe, but you could always add some chopped kale or spinach in there.
Sometimes I prefer the soup a little thicker, like a chili or stew (like in these photos), but most of the time I’ll thin it out with more broth to sip on. Isn’t the broth the best part of soup?! I actually made a crockpot full of bone broth recently and I’ve been drinking that instead of my afternoon coffee or tea. It’s so warming and flavorful!

Cabbage Roll Soup

You'll Need...
- 1 pound ground beef or turkey
- 1 large (29 ounce) can tomato sauce
- 4 cups diced fresh tomatoes (or two 15 ounce cans)
- 1 cup sliced carrots
- 1 cup diced onion (about ½ medium onion)
- 6 cups chopped cabbage (about ½ large head)
- 2 teaspoons minced garlic (about 2 cloves)
- 5 cups beef broth
- 1 cup quick brown rice
- ½ teaspoon salt
- ½ teaspoon black pepper
Directions
- Brown the meat and drain any excess grease.
- Add onion, garlic, cabbage, carrot, salt, and pepper to the meat. Stir well and saute 3-5 minutes until vegetables start to soften.
- Add diced tomatoes, tomato sauce, and broth, and bring to a boil.
- Add rice and return to a boil.
- Lower heat, cover, and simmer for 20-25 minutes until rice is cooked, stirring occasionally.
Additional Notes
Add more beef broth at the end, if you prefer the soup to be thinner.
