Confession: I am OBSESSED with Chipotle. I can remake a burrito bowl and it’s absolutely delicious, but it’s still not a Chipotle burrito bowl. I haven’t decided if it’s a good or bad thing that I no longer have a Chipotle near me now that I’ve moved home from school. I sure do miss it.
One of the best parts of their burrito bowls is the rice. The cilantro and lime add just enough flavor to make the bowl even better, without completely taking over. Even better than their rice? Cauliflower rice!
I introduced cauliflower rice in a couple of previous recipes, and I still haven’t stopped loving it. Even though I’ve pretty much shared the recipe already, this rice needs a blog post all for itself! I even made it for dinner a night and Zack’s dad, who doesn’t really ever experience different health foods, actually liked it!
I enjoy eating whole grains occasionally, but why not substitute them with a vegetable? The thing is, you can barely tell its cauliflower instead of rice. What all can you do with cauliflower rice? Treat it like any other type of rice! Serve it with Mexican food (like my chicken fajitas), stir fry, seafood, or pot roast; mix it with meat and veggies and make stuffed peppers; or just serve it on the side of any meal!
As I’ve mentioned before, I am a huge fan of cilantro. I really don’t think you can ever have too much in a recipe. (Helpful tip: treat cilantro like flowers! Cut the ends off and put in a jar of cold water and cover with a ziploc bag in the fridge. The cilantro will stay for one to two weeks!) The only other ingredient in this rice is lime, and you have your healthy side dish! If you haven’t tried cauliflower rice yet, this is your chance! This cilantro lime version is refreshing and simple, and is a great addition to most main courses.

Cilantro Lime Cauliflower Rice

Substitute white or brown rice with this cilantro lime cauliflower rice for a healthier addition to meals
You'll Need...
- 1 head cauliflower, cut into florets
- 2 tablespoons olive oil
- 2 tablespoons chopped fresh cilantro
- 1 lime
- Salt and pepper to taste
Directions
- First, make your cauliflower rice. In a blender or food processor, add cauliflower florets and pulse until rice-like.*
- Add olive oil to a large skillet on medium heat and once hot, add rice.**
- Mix well, cover, and cook for 5 minutes, stirring occasionally.
- Remove lid, increase heat to high, and cook for another 2 minutes or until rice starts to brown and reaches your desired crispiness!
- Add cilantro, lime, and salt and pepper, and mix well.
Additional Notes
*Depending on the size of your blender or food processor, you may have to make the rice in rounds. I use a Vitamix and make the rice in 3 to 4 rounds.
**One head of cauliflower makes enough rice for 4-5 people. If serving less than that, use only 1 tablespoon of olive oil and half the rice. You can easily freeze the other half of the rice for another day!
