Baked garlic lime tilapia topped with a refreshing mango pineapple salsa—perfect for any summer night!
I’m not sure if it’s because it’s freaking delicious or because I’m so excited for spring and summer weather, but I am super excited about this recipe!
Fish is one of my favorite foods and I’ve tried many different types—tilapia, salmon, cod, haddock, and even shark once—but tilapia continues to be my favorite. It doesn’t have too much of a fishy taste, but it still has a great flavor and never seems to get dry no matter how I cook it. One of the drawbacks of living in rural Pennsylvania means a limited availability of fresh fish, so unfortunately I usually buy frozen fish. I suggest using fresh fish as much as possible if you have the option!
To be honest, I never really liked mango. I tried fresh mango once in like eight grade and didn’t like it, so ever since I have avoided it. Just recently I decided to try mango once again and man am I glad I did! This salsa with fresh mango, pineapple, red onions, tomatoes, and cilantro is TO DIE FOR. It’s just so refreshing and has so many different flavors and textures. It would good with tortilla chips, pita chips, on tacos, or even just with a spoon!
I usually bake the fish, but it would also be great on the grill. This meal is perfect for a warm summer night (or when you’re wishing it was one). Enjoy!
Garlic Lime Tilapia with Mango Pineapple Salsa

You'll Need...
- For the fish:
- 6 fillets tilapia
- Salt and pepper to taste
- ½ tablespoon olive oil
- 2 limes
- 1 teaspoon garlic, minced
- For the salsa:
- 1 mango, diced
- ½ cup pineapple, diced
- 1 Roma tomato, diced
- ¼ cup red onion, diced
- 1 tablespoon cilantro, chopped
Directions
- Preheat oven to 350°F.
- Add fish to a baking dish, avoiding overlap as much as possible.
- Mix olive oil, juice from one and a half limes, garlic, and salt in pepper in a small bowl.
- Add mixture over the fish, making sure all is covered.
- Bake for 15-20 minutes until flaky.
- While the fish is baking, prepare the salsa. Dice all the ingredients and mix together.
- Top fish with salsa and add juice from remaining half of a lime.
