A delicious ham and bean soup that’s hearty and warming!
Ahh, soup. I have such a strong love of soup. Not just because it’s delicious and warming, but because when I think of it I immediately think of home. During high school and weekends home from college, my family would have what we call “Soup Sundays.” There’s nothing quite as relaxing as spending the day cooking in the kitchen with my mom and then sitting by the fireplace watching TV (usually Food Network or In the Kitchen with David on QVC) and eating a delicious bowl of soup.
Chicken noodle, stuffed pepper, broccoli, chicken tortilla—my mom makes them all, and in my opinion she is the BEST at making soup. One of my favorites that she makes is strangely ham and bean soup. It’s sort of a plain soup that isn’t at the top of the list for most people, but it just feels like comfort food to me, especially because of the hearty beans and salty ham.
Fortunately, ham and bean soup is also quite healthy too! The carrots, celery, and onions are sautéed in olive oil, the beans and ham provide a lot of protein to keep you full, and the only other ingredients are chicken broth, herbs, and spices.
This soup really couldn’t get much easier, either. Besides slicing and chopping the veggies, the remaining ingredients are basically just thrown in! The recipe calls for cubed ham, which is perfect for any leftover ham you may have, but you could also just grab a bag of ham already cubed at the store. Once all the ingredients are added to the pot, it only needs to cook for about 15 minutes then—voila—it’s done! Delicious, healthy, AND easy? That’s what The Small Town Foodie is all about!
Although I enjoy soup the most when my mom makes it, I’ve been making it myself and I’m so excited to share the recipe for her ham and bean soup on my blog! Enjoy!
