I used to have this idea that I had to make complicated dinners every night to prove my worth as a “foodie.” While I certainly enjoy trying different recipes and ingredients, I’m so glad I’ve learned that the easier, the better. Who really has time to cook a big dinner all the time, especially if you work a full-time job? I realized quickly that coming home at 5 p.m., making dinner, doing the dishes, then only having a couple hours to do anything else was not how I wanted to live my life.
I not only want to make my life easier in the kitchen, but that’s why I created The Small Town Foodie–to help you make healthy, easy meals too! My favorite kitchen tool for easy dinners? The crock-pot. Seriously a lifesaver. Throw ingredients in it in the morning (or even the night before and stick it in the fridge), and let it do all the work. This meal with ham and vegetables is one of my favorites!
I have a few ingredients I almost always have in this meal besides the ham, but it really is versatile. I’ll throw in whatever vegetables I have in the fridge, freezer, or from the garden! It all cooks down and gets the delicious flavor of the ham.
This is one of those meals that warms you up so easily. Here is Northwestern Pennsylvania it gets real cold, like below 0°F in the winter, and as the days get chillier, I love coming home from work to a hot dinner waiting for me. Plus, the house always smells amazing from it cooking all day!

Ham and Vegetables Crock-Pot Meal

This ham and vegetables crock pot meal is comforting and simple--perfect for dinner as the days get shorter and the weather gets colder!
You'll Need...
- 1-1 ½ pounds ham, cubed*
- 2 cups baby carrots (or large pieces of chopped carrots)
- ½ small head of cabbage, chopped (about 4 cups)
- 2 medium potatoes, cubed into bite size pieces (about 3 cups)**
- 2 cloves garlic, minced
- 1 cup chicken broth
- Black pepper to taste
Directions
- Once all ingredients are chopped and ready, add them to the crock-pot. Add potatoes and carrots first, then cabbage, then ham, and lastly the chicken broth, garlic, and pepper.***
- Cook on low for 6 to 8 hours.
Additional Notes
*Try to get ham with the cleanest ingredients possible! If there are only hams at the store that have added sugar, get the option that has the least.
**I use russet, but you can use any kind of potato.
***Layering the ingredients like this makes sure the ingredients that take the longest to cook are at the bottom. Also, this is the simplest version of this meal! Feel free to get creative and add different herbs and spices. I often add rosemary or time to the crock-pot..
