I cannot even tell you how many times I have heard someone say that eating healthy is hard, boring, or tastes bad. I used to drive myself absolutely crazy trying to defend all of these comments, but then realized people are just not educated about eating well. Still to this day people think fat is the devil and eating less means losing weight. Rather than getting annoyed, I’ve been trying to nicely educate people so everyone can live happy, healthy lives!
I’m not going to lie, blogging is not easy to keep up with, especially with a full-time job, tending a vegetable garden, and trying to have a personal life (I can’t even imagine how hard it is to do it while being a mom, too). I am just so passionate about The Small Town Foodie though because I feel like I NEED to educate people and show them that eating healthy is easy, fun, and delicious.
Okay, enough with that rant, I’m sure you want to hear all about this healthy chicken salad—a perfect example of tasty, simple food. Who would have thought a sandwich that is usually packed with mayo could be healthy? Thanks to the Whole 30 book It Starts With Food, I’ve learned how to create an olive oil mayo that can be used in so many recipes.
Besides the mayo, this calls for canned chicken (you can always use fresh if you prefer, but it’s so much quicker to use canned. Just try to get the brand at the store that has the least amount of sodium), scallions, celery, grapes, and walnuts. Could it get any easier?
I love love love this chicken salad as a lettuce wrap with a big, crispy piece of iceberg lettuce. You could also serve it on top of cucumber slices, in a whole grain wrap, or however creative you can get! I’ll make a huge batch of it on Sunday to have for lunch the whole week.

Healthy Chicken Salad

This healthy chicken salad is made with a homemade olive oil mayo and is a delicious version of the classic chicken salad sandwich!
You'll Need...
- 2 cans drained chicken
- 1 cup halved grapes (about 30-40)
- ½ cup diced celery (about 2 stalks)
- ½ cup diced scallions
- ½ cup crushed walnuts
- Iceberg lettuce (optional)
- For the mayo:
- 1 egg
- 1 tablespoon lemon juice
- 1 teaspoon yellow mustard
- ½ teaspoon minced garlic
- ¾ cup olive oil
- Salt and pepper to taste
Directions
- First, make your mayo. Add egg, lemon juice, mustard, and garlic to a food processor or blender and blend until smooth.
- Slowly add olive oil while blending, in a very thin stream.
- Add salt and pepper, blend once more, and refrigerate.*
- Add all other ingredients to a mixing bowl (chicken, grapes, celery, scallions, and walnuts). Add mayo and mix well, making sure chicken is broken apart and all ingredients are mixed thoroughly.
- Serve in a lettuce wrap or however you choose!
Additional Notes
*I suggest making the mayo ahead of time and storing in the fridge for at least half an hour to help it set. If you do not have time for that, it will be a little runny.
