These chicken fajitas are an easy, one-skillet meal full of sweet and spicy flavors.
Ever go to a Mexican restaurant and order fajitas? I used to be embarrassed when they brought out the loud, sizzling skillet, but now I actually enjoy it because I get excited knowing all that deliciousness is about to be in my belly.
Mexican restaurants offer countless unhealthy options—tortilla chips, enchiladas, burritos, tacos—but that’s where fajitas come to the rescue! If you just eat the vegetables and meat and avoid the tortillas, you’ve got a delicious, healthy meal. Even better than that? Make your own at home!
This recipe really is so simple. Marinate the chicken in seasoning, cook it and the vegetables in the pan, and serve it however you prefer—on top of brown rice, on top of cauliflower rice, in a whole grain tortilla, or even just by itself. The spicy seasoning with the sweet peppers is DELICIOUS.
Like most recipes on my blog, you can mix this one up however you choose by using different meat, such as shrimp or beef, and adding other vegetables. This chicken fajitas recipe is really the simplest version—don’t be afraid to experiment!
You don’t have to worry about having a bunch of dishes either, because all the ingredients cook in one pan! I love my cast iron skillet for this, because it gives everything a nice, charred taste. If you only have nonstick, that’s perfectly fine too!
Even though fajitas at the Mexican restaurant is one of my favorite meals when I go out to eat, you can save money and time by making this recipe at home!

These chicken fajitas are an easy, one-skillet meal full of sweet and spicy flavors
You'll Need...
- 4 chicken breasts, cut into bite-sized pieces
- 2 tablespoons olive oil
- 3 bell peppers, sliced into long pieces (I use a mixture of green, red, and orange)
- 1 medium onion, sliced into long pieces
- For the seasoning:
- 1 tablespoon chili powder
- ½ tablespoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Directions
- First, make the seasoning! Mix all the spices together.
- Add chicken, 1 tablespoon olive oil, and about half the seasoning to a bowl and mix well. Let marinate for at least 15 minutes.
- In a large skillet on medium heat, add 1 tablespoon olive oil.
- Once oil is hot, add chicken and cook for 2 minutes on each side.
- Add peppers, onions, and remaining seasoning and mix well.
- Cover and cook for 15-20 minutes, until vegetables are soft.
