When Zack and I don’t know what to have for dinner, we make what we call “mush.” Mush is basically some type of grain, meat, and vegetables thrown together to make a skillet full of deliciousness. If we were being technical here, this one skillet Mexican rice would actually be called “Mexican mush.”
All you have to do is throw a few ingredients together and you’ve got an easy and delicious dish for dinner! This recipe calls for Mexican ingredients, but you can always mix it up however you choose.
I don’t know about you, but any Mexican dish automatically improves if you add some sweet corn. Something about the texture and sweetness of the corn against the rice, beans, and spicy flavors, makes any dish irresistible. Confession: this is the best at Chipotle, which I’ve been missing SO much since I’ve moved back home from school. You can say this is my own little version of a burrito bowl.
Oh yeah, and this is totally healthy. Choose a rice that is gluten free (most of them are unless they come into contact with gluten). I use brown rice, but you can use any rice of your choosing, even cauliflower rice, just know you may have to modify the recipe depending on what rice you use.
Always avoid any rice with flavors already added and make sure you’re reading your labels! You should recognize the ingredient names and stay away from any sugar or other bad additives.
Besides that, you’ve got ground turkey, seasoning, onions, beans, corn, and tomatoes! How simple is that?

You'll Need...
- 1 tablespoon olive oil
- ½ small diced onion
- 1 teaspoon minced garlic
- ½ teaspoon diced jalapeno (optional)
- 1 pound ground turkey
- 1 tablespoon chili powder
- ½ tablespoon cumin
- 1 teaspoon paprika
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 ½ cups water
- 2 cups quick brown rice
- 1 15 ounce can sweet corn
- 1 15 ounce can black beans
- 1 medium diced tomato
- Greek yogurt (optional)
- Salsa (optional)
- Scallions (optional)
Directions
- Add olive oil to a large skillet on medium heat.
- Once hot, add onions, garlic, and jalapeno and cook until onions are translucent and garlic is brown.
- Add ground turkey and brown.
- Add spices (chili powder, cumin, paprika, salt, pepper) and water. Mix well and bring to a boil.
- Once boiling, add rice, cover, and reduce to a simmer. Simmer for 5-10 minutes or until the rice has absorbed all the water.
- Add corn, beans, and tomato and mix.
- Serve with Greek yogurt, salsa, and scallions on top!
