A quick and easy overnight oats recipe with delicious fall flavors!
I would normally start this post all about how much I love fall, but I already did that in my maple pumpkin spice almonds post. What is it about me and pumpkin with nuts? I don’t know, maybe because it’s the best combination EVER and makes me feel so fall when eating it.
Anyways, undoubtedly one of my favorite parts of fall is the food, as with any season or holiday. Fall and winter especially, though, because the food is just so comforting and I love so many fall flavors.
I’ve always been a breakfast girl, for a few reasons. First, I am hungry literally as soon as I wake up. I can’t even believe people when they say they don’t eat breakfast… I would be hangry at 9 in the morning. Second, breakfast food. Need I say more? Eggs, bacon, sausage, potatoes, hashes, french toast, pancakes, waffles, oatmeal–all my favorite foods. Oh, and coffee 🙂 (even though I am trying to wean off the coffee a bit. Post about it coming soon).
Lastly, even though I love the food, I love the feeling of morning even more. I like to get up early and start my day right! The birds chirping, sun rising, and quiet of the morning bring such a happy, relaxing feeling to me. I can’t wait until I have a giant front porch someday (and hopefully I work from home) and I can just sit on a rocking chair drinking my coffee, eating my breakfast, and enjoying the morning.
Let’s be real though, we all don’t have the time to enjoy a breakfast like that everyday, and that’s where overnight oats come in. If you’ve never tried overnight oats this is your chance. Not even lying, they are LIFE CHANGING. Throw a bunch of ingredients together at night and put it in the fridge, then by morning you have breakfast ready for you! I thought I’d be a little thrown off by the whole cold oats thing, but they’re surprisingly delicious.
Just get on Pinterest and search “overnight oats” and you’ll find hundreds of different variations. I’ve been making these pecan pumpkin pie ones for a while to use up pumpkin puree I always seem to have leftover in my fridge from another recipe. The ingredients in this recipe are simple–oats, pumpkin spice, pecans, pumpkin, vanilla, and milk (I use cashew milk, but any milk works). Sounds just like a piece of pumpkin pie right? But healthier and for breakfast.
Stop worrying about what to have for breakfast, and make yourself some of these pecan pumpkin pie overnight oats!

You'll Need...
- ½ cup rolled oats
- ½ teaspoon pumpkin spice
- 2 tablespoons chopped pecans
- ¼ cup pumpkin
- ½ teaspoon pure vanilla
- ¾ cup milk (I like cashew, but any kind will work)
Directions
- Add all ingredients to a jar or bowl and mix well.
- Refrigerate overnight and enjoy!
Additional Notes
You may want to add another splash of milk in the morning, depending on how thick you like your oats.

I’m about to try my first pumpkin recipe of the season 🙂 kind excited about it! looks great! I am def a morning person, although the weather in Portland at the moment has been making me want to stay in bed all day! so rainy and gloomy!

I guess I was a little too excited for pumpkin… I’ve already made like 5 recipes hahaha. If you have any extra pumpkin, you could make these oats 🙂 I know what you mean about the gloomy weather! It was so much easier getting up and then being productive when it was light out by 5:30am.
