Zucchini boats grilled to perfection and stuffed with spicy sausage and veggies.
Ever eat or drink something so often that you get sick of it–no matter how delicious it is? That’s how I’m starting to get with zucchini and yellow squash. I absolutely love it, but we’ve had so much in our garden, that’s I’ve caught myself thinking “zucchini for dinner AGAIN?” multiple times.
For my full-time job (at a chamber of commerce), we had our big summer festival a couple weeks ago, which means I got home past 10 p.m. every single night. This also means we neglected our garden for a few days. It rained some days, so we didn’t have to worry about watering it, but we did have to worry about the crazy amounts of veggies we had to harvest.
I’m talking 10 GIANT zucchinis, 10 yellow squash, and 40 cucumbers. It was madness. We ended up giving veggies to family, selling some to a local restaurant, and saving the rest for different recipes, including lots of zucchini boats.
This recipe is just one variation of zucchini boats–ground sausage, mushrooms, onions, and peppers–but there are so many different ways you could make them. I’ve seen ideas for Italian, taco, buffalo chicken, philly cheese steak, and broccoli chicken zucchini boats.
All you really need to do is cut the zucchini in half, scoop out the seeds, grill it, stuff it with delicious veggies and meats, top with cheese, then grill it again until the cheese melts. Simple as that.
I suggest eating zucchini when it’s in season, which is June through August, but if you end up wanting to make zucchini boats when it’s cold outside, you could always bake them instead of using the grill.

Grilled Zucchini Boats with Sausage, Mushrooms, Peppers, & Onions

Zucchini boats grilled to perfection and stuffed with spicy sausage and veggies.
You'll Need...
- 2 large zucchini
- 1 tablespoon olive oil
- ⅛ teaspoon salt
- ⅛ teaspoon black pepper
- 1 pound ground sausage (regular or spicy)
- 1 cup green pepper, diced (about one pepper)
- 1 cup onion, diced (about half a medium onion)
- 1 cup fresh mushrooms, diced (or one can of mushrooms)
- 1 teaspoon garlic, minced
- 1 cup shredded cheese of choice (I like gouda or muenster)
Directions
- Preheat grill to low/medium heat.
- Cut zucchini in half and scoop out all seeds.
- Rub the cut side of each zucchini half with olive oil, then sprinkle with salt and pepper.
- Grill zucchini halves for about 8-10 minutes on each side.
- While zucchini is on grill, prepare the filling. Start with browning the sausage, breaking it apart into small pieces as it cooks.
- Add chopped onions and peppers and cook another 3-4 minutes until softened.
- Add mushrooms and garlic and cook another 1-2 minutes until mushrooms soften and garlic starts to brown.
- Remove filling from heat and bring grilled zucchini boats inside to stuff.*
- Evenly distribute the sausage filling into each zucchini boat using a spoon or spatula.
- Sprinkle ¼ cup of cheese onto each zucchini boat.
- Place the boats back on the grill, cut side up, and cook another 3-5 minutes until cheese is melted.
- Cut zucchini boats in half and eat with your hands, or cut into small pieces and eat with a fork.
Additional Notes
*I find it easiest to get the zucchini off the grill by placing a large baking sheet on the edge and sliding the zucchini off the grill. You can also use two pairs of tongs and lift the zucchini, but this may be difficult once the boats are stuffed.
