Ever eat or drink something so often that you get sick of it–no matter how delicious it is? That’s how I’m starting to get with zucchini and yellow squash. I absolutely love it, but we’ve had so much in our garden, that’s I’ve caught myself thinking “zucchini for dinner AGAIN?” multiple times.
For my full-time job (at a chamber of commerce), we had our big summer festival a couple weeks ago, which means I got home past 10 p.m. every single night. This also means we neglected our garden for a few days. It rained some days, so we didn’t have to worry about watering it, but we did have to worry about the crazy amounts of veggies we had to harvest.
I’m talking 10 GIANT zucchinis, 10 yellow squash, and 40 cucumbers. It was madness. We ended up giving veggies to family, selling some to a local restaurant, and saving the rest for different recipes, including lots of zucchini boats.
This recipe is just one variation of zucchini boats–ground sausage, mushrooms, onions, and peppers–but there are so many different ways you could make them. I’ve seen ideas for Italian, taco, buffalo chicken, philly cheese steak, and broccoli chicken zucchini boats.
All you really need to do is cut the zucchini in half, scoop out the seeds, grill it, stuff it with delicious veggies and meats, top with cheese, then grill it again until the cheese melts. Simple as that.
I suggest eating zucchini when it’s in season, which is June through August, but if you end up wanting to make zucchini boats when it’s cold outside, you could always bake them instead of using the grill.
I’m always trying to make sure I eat at least a few servings of veggies each day, and zucchini boats makes that easy to do! Enjoy this recipe and let me know what other variations you try!
