Seafood has always been something I absolutely loved. I think it all started when my family would go to all-you-can-eat buffets while vacationing at the beach each summer. I can vividly remember piling my plate with snow crab legs, dipping shrimp in melted butter, and chewing on a giant clam for what seemed like hours.
I’ve grown to dislike the beach (sunburn, salty water, sand in my suit–no thanks), but my love of seafood has definitely not gone away.
I was trying to think up a recipe to share that could be made for Superbowl parties. Something that was finger food, easy to make, healthy, and, of course, delicious. After a few failed experiments, these breaded shrimp turned out perfectly.
A co-worker of Zack’s took a trip to North Carolina a few months ago, and brought back some fresh seafood for us. We bagged it by the pound and stored it in the freezer to add to meals throughout the year. It’s like seafood buffet quality shrimp, without actually having to travel to the beach.
I tried to make this recipe as easy as possible. You just have to dip the shrimp in egg, coat them in breadcrumbs with spices, then bake them in the oven for about 15 minutes. I added a bit of spice with the cayenne pepper, which goes great with a cool dip like my dill dip made with Greek yogurt.
