Breakfast is by far my favorite meal of the day. You know what makes it even better? All my favorite types of food! This spiralized sweet potato breakfast recipe includes four foods that I absolutely love—sweet potatoes, eggs, kale, and avocado.
If you didn’t see my last post (you can find it here), I’m doing the Whole 30 program this month! I normally love eggs, toast, and bacon for breakfast, but the program doesn’t allow you to eat bread. This has really turned into a positive thing, though, because I’ve found a new love of sweet potatoes for breakfast!
My mom first introduced me to this idea and I wanted to try it right away! She was shredding her sweet potatoes in her food processor, but my spiralizer did the trick! I have a little handheld spiralizer that works for the most part, but is super annoying and I end up getting frustrated and throwing part of the potato away. I’ve followed Inspiralized since I started eating healthy and I FINALLY bought the Inspiralizer®. You can definitely expect quite a few spiralized recipes in the future—it’s an AMAZING tool.
This recipe combines a lot of foods that may seem odd together, but it actually works out perfectly! The sweet potatoes with cinnamon provide just the right amount of sweetness against the flavors of the kale and the eggs with salt and pepper. Then when you break the yolk it combines with everything and it’s just delicious! The avocado adds a nice touch too—I like to take one right out of the fridge so it’s a nice creamy and refreshing touch to each bite.
You can always, of course, add different ingredients or change things up! I sometimes use regular potatoes and add different veggies, like mushrooms or spinach. It all depends on what you like. This recipe is SUPER good though and I do encourage you to try it!
I love sweet AND savory breakfasts, so this recipe is perfect for me because it combines both! It really is simple to make and I promise you won’t be disappointed by all the flavors and textures. It’s definitely a great start to any day!
Spiralized Sweet Potato Breakfast

This spiralized sweet potato breakfast is sweet AND savory with multiple flavors and textures in every bite.
You'll Need...
- 1 tablespoon coconut oil
- 1 medium sweet potato
- ¼ teaspoon cinnamon
- 1 cup of chopped kale
- 2 eggs
- Salt and pepper to taste
- Half an avocado
Directions
- Peel and spiralize your sweet potato.
- Add coconut oil to a skillet on medium heat, add spiralized sweet potatoes once oil is hot, and add cinnamon.
- Using tongs, make sure to evenly mix the potatoes with the oil. Cover and cook for about two minutes until potato starts to soften.
- Add kale, mix together with potatoes, then cover and cook for another two minutes until wilted.
- Make sure the potatoes and kale are laying evenly in the pan, making a bed for the eggs. Crack eggs in a separate bowl and add on top of the potatoes and kale, making sure yolks do not break. Add salt and pepper to eggs.
- Cover and cook for 2-3 minutes until eggs are cooked. Pay close attention, because the yolks can harden if left too long on the heat.
- Carefully move to a plate, add slices of avocado, and enjoy!
Additional Notes
If you don't have a spiralizer, you can shred your potatoes instead! (I do suggest you get one, though. They're great!)
