Enjoy this layered taco dip at a Super Bowl party, barbecue, family get-together, or taco night at home!
This recipe brings all the great ingredients of tacos into dip form. I actually made it for a family Christmas party back in December and people LOVED it.
Mostly every other dish at the party was unhealthy, so I assumed people who weren’t used to eating healthier dishes wouldn’t be fans of the dip. I did hear a couple people say “what is that green stuff on the bottom?” but other than that, it was a huge hit!
So, the layers, from bottom to top, are:
Guacamole (avocado + lime juice, salt, pepper)
Salsa (whatever kind you prefer. I use my mom’s homemade)
Black beans
Corn
Black olives
Onion
Tomato
Queso fresco
Cilantro
You could always mix it up–put the ingredients in a different order, add chicken or ground beef with taco seasoning, or add lettuce on top. I suggest keeping the guacamole on the bottom–the other ingredients keep it from getting brown. And I did find that adding lettuce wasn’t the best if you eat the dip leftover, because it gets pretty soggy (if you end up having leftovers, that is).
I don’t know why I never tried queso fresco before… it’s SO GOOD. If you can’t find it at the store, you could substitute another cheese. Feta has a similar taste and texture, but shredded cheddar or mozzarella would always work.
I’ve said this before, but I’m a little obsessed with cilantro. The recipe only calls for two tablespoons, but if I was making it just for me, I’d probably add more like one cup of it. I’ve heard people either hate or love cilantro and I’m definitely the latter.
With the Super Bowl coming up this weekend, this healthy layered taco dip is a must-have on your menu! Don’t wait until a special occasion to make it, though, because it’s worth whipping up any day of the week.
Layered Taco Dip
Enjoy this layered taco dip at a Super Bowl party, barbecue, family get-together, or taco night at home!
You'll Need...
- 2 medium avocados, mashed
- Juice of 1 lime
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup salsa
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can olives, drained and sliced
- 1/2 cup diced onions
- 1 cup diced tomatoes
- 1/2 cup queso fresco cheese, crumbled
- 2 tablespoons fresh cilantro, chopped
Directions
- Mix mashed avocado, lime juice, salt, and pepper, and spread on the bottom of a 8"x8" glass dish (or a dish of similar size).
- Layer the rest of the ingredients in order, making sure to spread out as evenly as possible (salsa, beans, corn, olives, onions, tomatoes, cheese, and cilantro).
- Enjoy with tortilla chips, plantain chips, on top of chicken, or by itself.
