This Waldorf salad is easy, healthy, full of sweet flavors, and perfect as a healthy dessert alternative.
I give Zack full credit for the inspiration behind this post. His mother, sister-in-law, and I were deciding who’s making what for Thanksgiving dinner and–he’ll probably kill me for sharing this–but Zack said “can we have that salad that’s like a pasta salad but with grapes and nuts in it?” Hahaha, we assumed he meant Waldorf salad, which led to this healthier version!
We had our Thanksgiving with Zack’s family this past Sunday because some of his family members are going out of town this week. I threw some ingredients together and whipped this up for dinner and it turned out pretty dang well. I actually had to make it a second time, because I never expected to like it enough to want to add it to the blog and I didn’t write any measurements down the first time.
Waldorf salad typically calls for mayo, but I chose to go the Greek yogurt route, which makes it a little more of a dessert rather than how it’s typically served like a salad with lettuce. I mixed honey, vanilla, and cinnamon with the Greek yogurt to add some sweetness and flavor and take that super tangy taste away. Then, all you have to do is add that to the fruit and nuts and it’s done! You could always skip the honey, vanilla, and cinnamon and add some more savory ingredients, like mustard, salt, and pepper, and serve it with lettuce or spinach.
I made a bit too much of the salad, so we still have leftovers in our fridge and I’ve been enjoying it as a snack. This is great, though, if you’re looking for a healthier dessert for holiday dinners. As I suggested in my 10 Tips to Help You Stay Healthy During The Holidays, bring your own dish a dinner or party and you’re sure to have something healthier to eat!
If you’re looking for a healthier dish or just to mix things up at your holiday dinner, try out this Greek yogurt Waldorf salad!
Greek Yogurt Waldorf Salad
Prep: | Yield: Serves 6-8 people | Total: |
This Waldorf salad is easy, healthy, full of sweet flavors, and perfect as a healthy dessert alternative.
You'll Need...
- 5 apples, chopped into bite sized pieces (I prefer a crispy apple like honeycrisp, fuji, or pink lady)
- 1 tablespoon lemon juice
- 2 ½ cups grapes, cut in half (about 60 grapes)
- ¾ cups pecans, roughly chopped
- 3 cups plain Greek yogurt
- 3 tablespoons honey
- 1 tablespoon pure vanilla
- ½ tablespoon cinnamon
Directions
- Add apples to a large bowl and mix well with lemon juice.*
- Add grapes and pecans and set aside.**
- In a separate bowl, mix greek yogurt, honey, vanilla, and cinnamon.***
- Add Greek yogurt mixture to the apples, grapes, and pecans, and mix well, making sure all pieces are covered.
- If serving later, keep refrigerated.
Additional Notes
*The lemon juice keeps the apples from browning as you prepare the rest of the salad
**If you are not serving this salad right away, I suggest adding the pecans later, so they do not get soggy.
***Taste the mixture to make sure it’s sweet enough for you. If not, add more honey.
